Eat the Rainbow Summer Salad

Enjoy this easy summer salad that has ALL the colours of the rainbow - Red, orange, yellow, green, blue, indigo and violet. Or, choose your own fruit and veggies, pick a protein to add and pull it all together with the yummy Lemon Cilantro Dressing. Delicious and good for you! Makes 4 meal-size salads or 8 side salads.

Eat the Rainbow Summer Salad


* 2 Tomato, chopped

* 1 Orange Pepper, diced

* 1 cup frozen/fresh Corn

* 6 cups Mixed Greens

* 1 1/2 cups Broccoli, chopped

* 1 cup Blueberries

* 1 Beet, grated or diced

* 2 cups Purple Cabbage,


Lemon Cilantro Dressing


* 3/4 cup Plain Greek yogurt

* 1/4 cup Mayonnaise

* 1/2 Avocado

* 1/2 cup Cilantro (or Basil)

* 1 Garlic clove

* 1 Lemon zested & juiced

* 1/8 tsp Sea Salt


1. Make the Lemon Cilantro Dressing: Add all the ingredients for the dressing into a blender or food processor and blend until smooth. Set aside or in the fridge until ready to serve.

2. Assemble the Salad: Arrange the salad like a rainbow in a salad bowl. When ready to serve toss with the dressing and divide. Alternatively, assemble the rainbow salad in individual bowls. Enjoy!

More Protein: Serve with quinoa, crispy tofu, hard boiled eggs, chickpeas, beans, lentils, grilled chicken, salmon, beef, or pork.

Grilled Veggies: Roast or grill the veggies on skewers or in a grill pan if you like.
